8 Spring onions 4 green chillies 2 clove garlic 1 tbsp fresh ginger 1 tbsp Coriander seeds 1/2 tso Black Pepper 1/2 handful lime leaves 2 stalks lemon grass 2 handfuls Basil 2 handfuls coriander 3 limes |
Put all the ingredients in a food processor whizz till it's a smooth green paste |
4 Chicken breasts |
Cut each chicken breast into 5 pieces Marinade for half an hour in some of the paste |
1 can coconut milk |
Heat oil in a wok or thick bottomed pan Fry the ckicken for 4 minutes, then add the marinade Stir in the coconut milk, bring to the boil and simmer for 8 minutes |
1 handful pistachio nuts |
sprinkle with pistachios and serve with rice or noodles |
